Investigates and develops preparation techniques, baking and cooking methods, finishing and presentation techniques as well as basic food hygiene and safety practices and principles relevant to gâteaux and torten. Develops the competence, knowledge and skills required for producing a wide range of modern style gâteaux (entremets), tarts, petits gâteaux and petits fours.
