Explore important wine producing countries with particular reference to New Zealand, France, Italy and Spain. Discussion will focus on Geographic Indication regulations including labelling, leading grape varieties, viticulture and wine-making practices for white, red and sparkling wines. Through a series of wine tastings that illustrate the profile of key grape varieties and regional wine styles, sensory skills will be developed for wine evaluation and to write tasting notes. Exploration of wine list development and challenges to build a successful wine programme.
