Permeating the socio-cultural study of gastronomy is the often subtle but persuasive influence of politics, power and social justice. This is driven by larger economic forces. Students examine and research contemporary themes such as sustainability and ethics within consumer awareness and responsibility (micro issues); and the commercial supply chain, food safety and health concerns, food waste, and wider environmental issues such as land abuse, global warming, carbon food print (macro issues).
