Students explore how both people and food are geographically mobile, and in what way different cultures sustain and celebrate their own food traditions by emphasising ritual, protocol and symbolism. As an increasing variety of food products and taste experiences becomes available to the public, through markets, specialist grocers, restaurants and cultural events, many indigenous foods/traditional preparation practices are repositioned into various levels of the dining scene (e.g. Mexican, Asian and Middle Eastern eateries). This impacts the food culture of a city (e.g. Auckland), and employment opportunities in the hospitality industry.
